Wanda receives a $25.00 California Decor Store gift certificate for her recipe entry to make: DIABETIC CHEESE CAKE (nearly sin-free!) ● 1 small package sugar free/fat free JELLO cheesecake pudding mix ● 1 8-ounce brick of reduced fat or non-fat cream cheese ● 1/2 cup or less of fat free sour cream ● 1/4 cup of lemon juice or lime juice ● 1 cup milk ● 1 vanilla wafer pie crust ● Fresh cut-up fruit (optional) Beat the brick of cream cheese with the lemon or lime juice into a creamy state. Add 1 cup of milk and the pudding mix. Beat until completely creamy. Pour mixture into the pie crust and top with sour cream to taste. Top with fresh fruit if desired. Chill in refrigerator for several hours (or overnight). Serve cold. (If you are feeling naughty you can top with a small amount of whipped cream when serving :-) Text Box: Recipe Contest Winner!
